All of these are my favorites, but the pancake recipe is the best pancake I have eaten.
Sausage Gravy
2 lbs. bulk sausage
1/4 cup butter or margarine
1-1/4 cup flour
2 quarts milk
salt
seasoned salt
black pepper
Cook sausage in butter until browned over medium heat. Add flour and stir in well. Gradually add 1-½ quarts of the milk. Continue to heat and keep stirred. It will thicken as it cooks. Add more milk if necessary to make it the right consistency. Continue to cook a while after the right consistency is reached. Add seasonings according to your taste. Serve with biscuits or hash browns.
Hash Browns
3 cups finely shredded potatoes
2 eggs, well beaten
1-1/2 tablespoon flour
1/8 teaspoon baking powder
1/2-1 teaspoon salt
1/2 teaspoon grated onion
In mixing bowl, gently combine eggs and potatoes. Combine dry ingredients and onion. Stir into potato mixture. Drop by tablespoonful into hot oil. Brown lightly on both sides.
Pancakes
1 egg, beaten
1/2 teaspoon salt
2 teaspoons sugar
1-1/4 cups milk
1/2 teaspoon soda
2 teaspoons baking powder
1-1/4 cups bread flour
3 tablespoons Mazola oil
Bake on hot griddle. No oil is needed if fried in shortening.
