Some great dishes that will make a hit with the family.
Vegetable Meat Loaf
1 package frozen green beans and carrots, thawed
1 cup celery, diced
1/2 cup onion, finely chopped
2 pounds ground beef
1/2 cup oats, uncooked
3/4 cup milk
2 eggs
1 to 2 teaspoons dry sage, to taste
1 tablespoon Worcestershire sauce
Dash of garlic salt
Salt and pepper, to taste
Cheddar cheese slices
Mix all the ingredients together (except cheese slices) and blend well. Form into loaf and put in a greased pan. Cook uncovered in 325° oven for 1 hour. Before serving, put slices of cheddar cheese on top and put back in oven until cheese melts. Serve hot or cold.
Yield: 6-8 servings.
Strawberry-Nut Bread
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon sale
1 tablespoon ground cinnamon
2 cups sugar
4 eggs, beaten
1-1/4 cups vegetable oil
2 cups strawberries, sliced (fresh or frozen)
1-1/2 cups pecans, chopped
Combine dry ingredients. Add eggs, oil, strawberries and pecans. Stir just until all ingredients are moistened. Spoon batter into two well-greased loaf pans. Bake at 350° for 60-70 minutes until cake tests done. Cool in pans 5 minutes. Remove to wire rack to cool completely. Freezes well.
Grilled Sausage, Pepper, Onion Dish
1 pound smoked sausage, cut into chunks
3 jalapeno peppers, sliced
1 green bell pepper, cut into bite-size chunks
1 sweet onion, cut into bite-size chunks
1/4 cup Tabasco sauce
1 (10-ounce) jar sweet and sour sauce
1 foil bag or 2 pieces of tinfoil
Place sausage, peppers and onion in foil bag. In a small bowl, mix Tabasco sauce and sweet and sour sauce. Pour over sausage, peppers and onions. Seal foil bag tightly and place on grill. Cook for about 45 minutes, turning every 15 minutes. Split open and serve immediately.
