If you like vegetables, you will love these recipes.
Squash and Pepper Skillet
1 medium onion, thinly sliced
1 tablespoon olive or vegetable oil
5 medium zucchini, sliced
3 medium yellow summer squash, sliced
1 small sweet red or green pepper, julienned
1 garlic clove, minced
Salt and pepper to taste
In a skillet, saute onion in oil until tender. Add the zucchini, yellow squash, red pepper and garlic; stir-fry for 12-15 minutes or until vegetables are crisp-tender. Season with salt and pepper.
Yield: 8 servings
Garden Veggies Casserole
2 cups cooked rice
1 cup (4 ounces) grated cheddar cheese, divided
1/2 cup chopped onion
1 cup cauliflower florets
1 cup chopped broccoli
1/2 cup sliced celery
1/2 cup sliced carrots
1/2 cup sliced zucchini
2 cups pasta sauce
1 clove garlic, minced
2 teaspoons dry basil
Preheat over to 350 degrees. Combine rice and half of cheese; mix well. Place in bottom of 10 x 6 x 2-inch baking dish. Meanwhile, steam vegetables, 5-7 minutes until tender-crisp. Spoon vegetables over rice-cheese mixture. Combine pasta sauce, garlic and basil. Pour over vegetables. Top with remaining cheese. Bake for 30 minutes.
Mexican Okra
1/2 lb. ground meat
1 small onion, chopped
1 (#2) can tomatoes
3 cups sliced okra
1 cup watter
1 teaspoon chili powder
Garlic power
Salt and pepper to taste
Brown meat and onions. Add chili power, stir; add all other ingredients and simmer until okra is tender.
