Great recipes for celebrating July 4th.
Star Spangled
Fruit Tart
1 tube (18 ozs.) refrigerated sugar cookie dough, softened
1 package (8 ozs.) cream cheese, softened
1/4 cup sugar
1/2 teaspoon almond extract
1 cup fresh blueberries
1 cup fresh raspberries
1 cup halved strawberries
Press cookie dough onto an ungreased 12-inch pizza pan. Bake at 350 degrees for 10-15 minutes or until golden brown. Cool on a wire rack.
In a small bowl, beat the cream cheese, sugar and extract until smooth. Spread over crust. In center of tart, arrange berries in the shape of a star; add a berry border. Refrigerate until serving
Yield: 16 servings.
Green Bean and Mozzarella Salad
2 cups cut fresh green beans (2-in. pieces)
6 plum tomatoes, sliced
1 block (8 ozs.) mozzarella cheese, cubed
1/2 cup Italian salad dressing
1/3 cup minced fresh basil
1/4 tsp. salt
1/8 tsp. pepper
Place beans in a small saucepan and cover with water. Bring to a boil; cook, uncovered, for 6-8 minutes or until crisp-tender. Drain and rinse in cold water.
Place beans in a large salad bowl. Add the remaining ingredients; gently toss to coat. Cover and refrigerate for 1 hour before serving.
Yield: 6-8 servings.
Southwestern Backyard Burgers
1 can (4 ozs.) chopped green chilies
1/4 cup Worcestershire sauce
1/2 tsp. hickory Liquid Smoke, optional
1/2 cup crushed butter-flavored crackers (app. 12 crackers)
4-1/2 tsp. chili powder
3 tsps. ground cumin
1/2 tsp. salt
1/2 tsp. pepper
2 lbs. lean ground beef
1/2 lb. bulk pork sausage
8 slices pepper Jack cheese
8 sesame seed hamburger buns, split
Lettuce leaves, optional
In a bowl, combine the first eight ingredients. Crumble beef and sausage over mixture and mix well. Shape into eight patties.
Grill, covered, over medium heat for 5-7 minutes on each side or until no longer pink. Top with cheese. Grill 1 minute longer or until cheese is melted.
Grill buns, cut side down, for 1-2 minutes or until toasted. Serve burgers on buns with lettuce if desired.
Yield: 8 servings
